Known for Mardi Gras associated with the Cajun culture, Lafayette hosted a more rural cross-section of participants with less emphasis on expensive costumes. The country people rode from house to house collecting chickens for a gumbo prepared at a designated rendezvous. Others came to town to show off and ride in their finest, or watch the parades.
